oh my goodness. I'm drooling right now. Those lemon cheesecake bars are so good and I could really go for some. But, I think my thighs might hate me for it.
I know what you mean about those lemon cheesecake bars!! I could eat them every single day for the rest of my life!!

I made your Enchilada Casserole for dinner today. I used mild sauce & it was still "warm", but REALLY GOOD! Next time I may use some tomato sauce for part of the enchilada sauce as my husband doesn't tolerate anything very spicy. Thanks!

Betty...I'm so glad you liked the Enchilada Casserole!! Sometimes when I make it it's a little too spicy for me as well, but my husbands ok with that...the spicier the better for him!:)
I think the tomato sauce idea is good, also I think sometimes a lot of the heat comes from the onion. Sometimes you just get a really "hot" onion. You might also want to check out our Enchilada Sauce recipe...it is very mild and really good in this recipe!
