Lime Pineapple Jello Fluff

I hope everyone had a wonderful 4th of July! 

It is one of my favorite days of the year.  My wonderful husband was born on that day on the bicentennial of America's birthday...what an awesome birthday, huh! 

When he was little he thought everyone was celebrating his birthday.  They'd have a special parade and fireworks just to celebrate him!:)

And this is one of his favorite side dishes. 

It is especially wonderful during these summer months!  Nice and light and yummy!

Lime Pineapple Jello Fluff
1 carton (16 oz.) whipped topping
1 pint cottage cheese
1 small package lime jello
1 can crushed pineapple, well-drained

Mix all ingredients together well and refigerate for about 30 minutes before serving.

Glass Block Jello (and other St. Patty's Day food ideas)

It's so much fun to eat green on St. Patricks day!  It had always been a challenge for me to find the perfect "green" food for my family to eat (since they're not into the corned beef and cabbage thing!), but I now have the best St. Patty's Day dinner's that the kids LOVE!!
It's a pretty simple meal. 

I make chicken quesadillas.  Of course we use the Spinach Tortillas (kid's can't even tell the difference) and then just fill them with shredded chicken and cheese.  Serve it with some Guacamole and sour cream, or with green salsa.
We then have a fun side to go with it.  You can just make it simple and have a green salad, or Pistachio Jello Salad, or the Glass Block Jell-O (the recipe you will get today!)

For drinks you can serve Frape or Lime Kool-aid.
And best of all...Dessert!  Here's a few of my favorites for you.  Mint Brownies, Jello Poke Cake, and Mint and Chocolate Chip Cupcakes.

Glass Block Jello

4 3-oz. packages lime Jello
2 packets unflavored gelatin (like Knox)
1 14-oz. can sweetened condensed milk
Spray 9 x 13 pan with cooking spray and set aside.

Bring 4 cups of to a boil. Combine the 4 packages of Jello with boiling water and stir until Jello is dissolved.  Pour into 9 x 13 pan and refrigerate for at least 4 hours, but overnight is better.
After your Jello is set, bring 1 1/2 cups of water to a boil.  In the meantime, sprinkle 2 packages of unflavored gelatin over 1/2 cup of cold water and allow it to stand for 4 minutes. 
When the water is boiling, pour it over the dissolved gelatin and stir to combine.  Add the sweetened condensed milk and mix well.  Let cool to room temperature.
Spray another 9 x 13 pan with cooking spray and set aside.

Cut the lime Jello into cubes and put them in the new 9 x 13 pan.  Pour the cooled milk mixture over the Jello.  Make sure they are all distributed evenly and that they are not sticking out of the milk mixture too much. 

Place in the fridge to chill overnight.  Cut into squares and serve to your little leprechauns!:)   (If you happen to have a four-leaf clover cookie cutter, that would be darling too!

NOTE:  This Jello can be made with any flavor and colors you would like.  Try red for Valentines, Red and green for Christmas, a variety for fun, etc.

Pistachio Jell-O Salad

Today is gonna be HARD!!  I sent my baby (who is 4 and doesn't like me calling him my baby!) off to preschool this morning!  I. AM. ALL. ALONE!!!  I always thought I'd look forward to this day, but it is really going to take some time to get used to!  I should really do some cleaning, but all I want to do is just sit around and eat. (YES...I am an emotional eater:)!!)  And this is one of those things that I would just love to be able to snack on all morning while my baby's gone...bowl of Pistachio Jell-o in one hand a box of tissues in the other....

Pistachio Jell-O Salad
1 small box of Instant Pistachio Pudding
1 (12 oz.) carton of Whipped Topping
1 pint (2 cups) Cottage Cheese
1 can (22 oz.) Crushed Pineapple, drained
2 cups mini marshmallows
1/2 cup chopped pecans

Mix whipped topping, cottage cheese, pistachio pudding, and pineapple together in a large bowl.  Then add the marshmallows and pecans and gently mix in.  Place in the fridge for about 30-45 minutes before serving. 

I just couldn't help but add a picture of my baby Rhett on his 1st day of school! 
He looks so grown-up!!

Will this get easier??  Please lie to me if you have to!:)

Raspberry Pretzel Jello Salad

I always serve this with dinner as a Jello salad, but it can also be a dessert on it's own!  It is especially delicious (as Nacho would say!!:))!!  I must hear that line or some other one from Nacho from my hubby or kids no less than 30 times a day!!  And whenever I try I always get made fun of because I have a terrible accent!  Anyway, that has nothing to do with this recipe...I just got carried away!:)  Just trust me...YUM!

Raspberry Pretzel Jello Salad
1 1/2 cups crushed pretzels
1/2 cup sugar
1 cube butter, melted
1 cube cream cheese, softened
1/2 cup sugar
1 tub (8 oz.) cool whip
1 large box (6 oz.) Raspberry Jello
2 cups boiling water
1 bag unsweetened frozen raspberries

Pretzel Crust:
Mix and press the pretzels, 1/2 cup sugar, and melted butter into the bottom of a 9X13 pan.  Bake at 350 degrees for 8 minutes.  Let cool

Cream Center:
Blend together the cream cheese and 1/2 cup sugar.  Add and mix in the cool whip.  Spread over the cooled pretzel crust and then refrigerate until cooled.

Jello top:
Dissolve the Jello in the boiling water.  Add the raspberries and stir.  Pour over the cream center and refrigerate until set.  Usually 4-6 hours. 

Enjoy a yummy side or a yummy dessert!!:)

Dream-sickle Jello

Here's another salad for you, this time a Jello salad! Jello salads are right up there with pasta salads for me. I just really like them! This one also just yells spring to me. It is so yummy and really does taste like a dream-sickle in jello form!

Dream-sickle Jello
2 small packages cook and serve lemon pudding
1 large package orange jello
Cool Whip

Cook pudding according to directions. Dissolve Jello according to directions. Stir pudding and Jello together while they are both still hot. When mixed thouroughly, pour into 9x13 inch pan. Let set. Overnight is best, but at least 6-8 hours. Top with Cool Whip.
So easy and so yummy!! My kiddo's absolutely LoVe this one too!

I've now tried this in raspberry instead of orange as well.  Keep all the ingredients the same except change out the orange jell-o for raspberry.  It was REALLY REALLY good!!  Don't know which I like better.  I've got strawberry on my list of next flavor to try!

Lemon-raspberry mousse squares

Can I just say YUMMY!!!! I saw this recipe on the Nilla wafers box and knew I had to try it! This is a perfect summer time side or dessert dish. It is so light and fluffy and I just LOVE the lemon in it!!

Lemon-raspberry mousse squares
48 Nilla wafers, divided
3/4 cup boiling water
1 pkg. (3 oz.) lemon gelatin
1 cup ice cubes
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
1 tsp. lemon zest
1/3 cup raspberry preserves
1 tub (8 oz.) whipped topping, thawed, divided
fresh fruit or lemon zest (optional)

Place about 16 wafers on the bottom of an 8 inch square pan. Add boiling water to the gelatin mix and stir for 2 minutes or until it is completely dissolved. Stir in the ice until it is melted.

Beat the cream cheese, sugar and lemon zest with a mixer until blended and smooth. Gradually beat in the the gelatin and then whisk in 2 cups of cool whip.

Pour half of the gelatin mixture over the Nilla wafers. place about 16 more wafers on top of the gelatin mixture. Microwave preserves for about 15 seconds or until melted. Pour and spread over the wafers. Top with remaining gelatin mixture.

Refrigerate for 4 hours or until firm. Top with whipped topping and either fresh fruit or lemon zest.

Jello fluff

This is one of my families favorite recipes. It really is kid and adult friendly and there are so many ways to make it!

Jello fluff
1 carton (16 oz.) whipped topping
1 pint cottage cheese
1 small package lime jello
1 can crushed pineapple, drained

Mix all ingredients together well and refigerate for about 30 minutes before serving.

You can mix and match any fruit and jello that you like. We've done strawberry jello with fresh sliced strawberries, strawberry jello with crushed pineapple, raspberry jello with raspberries, raspberry jello with triple berries (blueberries, raspberries and blackberries). Try whatever tickles your fancy!:) This one is strawberry jello with strawberries.
Also, if you are trying to watch your figure this can easily be made light and honestly I can't tell a difference so that's the way we always do it! You just use light whipped topping, fat free cottage cheese and sugar-free jello! Easy as that!! Enjoy!
