Chicken Bacon Croissant

I love these sandwiches!  They are so perfect for these hectic May days!
May is so unbelievably jam packed with activities, programs, recitals, projects, homework, baseball, track...and I'm sure you all could add plenty to the list...so these are a lifesaver!

One of the best features of these is that you can make them ahead of time.  They are even better the next day, it gives it time for all the flavors to combine & makes them so delicious!  Grab it on the run & have a nice picnic at the baseball park or track meet...or hurry and scarf them down in the car before that special recital/program!  Beats fast food any day!

Chicken Bacon Croissant
PRINT RECIPE


3 boneless skinless chicken breasts, cooked and shredded
1/2 cup milk
1/2 cup mayo
1/2 teaspoon garlic powder
1/4 teaspoon onion salt
1/4 teaspoon ground mustard
3 stalks celery, chopped
2-3 green onions, chopped
1/2 package of turkey bacon (you can use regular as well)
croissants

Combine milk, mayo and spices and mix until combined.  Add celery and onions.  Stir in the shredded chicken; mix well.  Place in refrigerator for at least 2 hours to let the flavors combine.

Serve on croissants.

Pepper Jack Pulled Pork Ciabatta Sandwich

My favorite thing to do with shredded meats is to make sandwiches out of them.  But it has to be made on a ciabatta roll!  They are my absolute favorite...and they sell them (at least at Walmart) in mini's...so much fun! (Check out our Turkey Ciabatta Sandwich that is to die for as well!)

This is an easy wonderful meal that even my kid's enjoyed.  The pork is cooked in the crock pot all day so it is so nice and tender when you're ready to throw the sandwiches together.  You will probably end up snagging a few bites in the process!:)  We love that they can be made to order.  Some of my family didn't want onions, some didn't want avocados, some wanted colby jack cheese instead of pepper jack, etc.

Pepper Jack Pulled Pork Ciabatta Sandwich
PRINT RECIPE
 
 
2 lbs boneless pork roast
1/2 cup chopped onion
1 can (14.5 oz.) beef broth

Ciabatta Rolls
1 can (small) refried beans (I used fat free)
1 packet taco seasoning
pepper jack cheese, sliced thin
red onion, thinly sliced
avocados, sliced
dijon mustard

Place roast, onion and beef broth in crock pot.  Cook on low for 6 to 8 hours.  Shred the pork using 2 forks in the crock pot...it will pretty much fall apart for you!  Leave it in the crock pot until ready to use on warm.

 To prepare your sandwiches, mix the refried beans with the taco seasoning.


Spread refried bean mixture on the bottom of your ciabatta rolls.  Place on large cookie sheet.


Place a nice amount of pork on top of the beans and then top with onions and avocados.


Place enough cheese to cover the toppings.  (These were all made with colby jack cheese, but I think the pepper jack is AMAZING on these!!)  Add the tops to the cookie sheet as well.


Place under the broiler in your oven for 1-2 minutes.  Watch them closely, you just want the cheese to be melted, not burned!:)

Remove from oven and slather some dijon on the tops of the ciabatta rolls and smoosh together.

Now feast...!!

Chicken Caesar Sandwiches

Is it unbearably warm in anyone else's part of the country right now?  We've had a couple of days of really warm weather.  (I realize some of you may have way hotter weather than I do, so I'm sorry to complain, but I'm a wimp when it comes to heat!) 

We broke down and installed our swamp cooler on Saturday, and boy am I glad we did!  (A little less sweat dripping down my back is a good thing!)

Which brings me to this recipe.  It's a crockpot recipe which allows you to not have to heat up your oven & consequetnly your kitchen. 

Yeah for the crockpot during the hot months!


Chicken Caesar Sandwiches
Recipe adapted from The Girl Who Ate Everything

4 boneless skinless chicken breasts
1 cup Caesar dressing (use your favorite brand...low fat works too)
1 cup cup freshly grated Paremesan cheese, divided
1/4 cup fresh chopped parsley or 2 teaspoons dried parsley
1/2 teaspoon pepper
lettuce (iceberg, leaf, or romaine)
6 hamburger buns
butter or cooking spray

Place chicken in crockpot along with 2 cups of water.  Cover and cook on low heat for 4-6 hours.

Remove the chicken to a plate and then drain the water from the crockpot.  Shred chicken, discarding any fat.

Place the chicken back in the crockpot and add the dressing, 3/4 cup of the parmesan, parsley, and pepper.  Stir until combined.  Cook for an additional 30 minutes on high heat, or until mixture is hot.

When the chicken is about finished, spread butter on both sides of each hamburger bun.  (You can also just spray them with cooking spray to cut on some calories if you'd like)  Place on a cookie sheet and put in your oven with the broiler on.  Mine only took about 1 minutes to brown nicely, so you just need to keep an eye on them so that they don't turn black (yes, I have done that before!). 

Spoon chicken onto toasted buns, top with leftover Parmesan and the lettuce of your choice.

Chicken, Bacon & Ranch Croissants

I have to confess...I didn't make much of what I had planned for conference weekend.  Wasn't feeling so well this weekend, had an upset stomach that would not let me cook hardly anything!  Just thinking about some of those foods I had planned had my stomach turning upside down!  I was so disappointed!  I was able to make these croissants, but was only able to take a couple of bites before I handed it over to my hubby (Tony) to finish off!  My diet mainly consisted of apples and grapes last weekend!  Guess it's good for my diet!!:)  Anyway, I can't be the best judge on these because they made my stomach turn...not because they weren't good, but because of the way I was feeling.  But Tony praised them up and down.  He kept telling me how good it was and even ate leftovers the next day for lunch!  I love it when I find a recipe that he REALLY likes.  He likes most everything, but only occasionally it'll be something that he just really likes and raves about!  I'll have to do a post with all his favorites sometime!  Anyway, sorry for the long intro!  Here's the recipe!

Chicken, Bacon & Ranch Croissants
1/2 cup milk
1/2 cup mayo
2 green onions, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon mustard powder
5 teaspoons Hidden Valley Ranch Dressing mix
1/2 cup diced celery
2 cans (12.5 oz.) chicken, drained
1/2-1 cup Real Bacon pieces (depending on how much you like bacon!)
croissants
lettuce

Blend together the mayo, milk and ranch dressing mix in a medium sized bowl.  Add the garlic powder, onion powder, and mustard powder.  Add the celery and onion.  Flake the chicken with a fork (or with your fingers as I do) and add to the bowl.  Mix well.  Chill for several hours for all the flavors to combine.  Serve on croissants with lettuce. 

Tony says it would be really good with a sliced tomato on there too, but we didn't have any tomatoes at the time!  We'll try it out next time, and hopefully I'll be feeling good enough to enjoy it with him!

Leftover turkey Ciabatta Sandwiches

If you've got some leftover turkey I've got the most wonderful sandwich that you have just got to try!! Tony (the hubby) and I ate one every day for 3 days straight and ran out of Ciabatta bread and were not too pleased!:) They are that good!!

Ciabatta Turkey Sandwiches
Ciabatta rolls
leftover turkey breast (white meat)
red onion, cut into rings and separated
cheese (your favorite...we just used sliced cheese but I think some Havarti would be divine on this sandwich!)
lettuce
tomatoes
Guacamole (we just use a guacamole mix found by the produce in walmart with some avocados)
bacon
miracle whip/mayo

First you need to toast your ciabatta roll. (these are found in the bakery section of most grocery stores...we got ours at walmart) Spread you choice of miracle whip or mayo on one slice and lots of guacamole on the other.

Use a small frying pan and put a little bit of olive oil in the bottom and then cook your onion and turkey together in the oil until a little browned. Salt and pepper to taste. Place on one side of the ciabatta roll.

Now just pile on all the other toppings. Cheese, bacon, lettuce, and tomato.

Smooch together and take a bite of heaven!!:)

Seriously, these were so good. Don't skip the guacamole...it is what makes this sandwich in my opinion!!
