Morning Maple Muffins

Kyla and Caleb had their Destination Imagination competition on Saturday and they had to be at the school to load the bus at 6:15 a.m.!!! So I decided to make some muffins for them to take for their breakfast on the bus. These are one of Tony's favorite muffins. The best part is the topping!

Morning Maple Muffins
Recipe from Taste of Home

2 cups flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cups milk
1/2 cup butter, melted
1/2 cup maple syrup
1/4 cup sour cream
1 egg
1/2 teaspoon vanilla
9 Tablespoons flour
9 Tablespoons sugar
6 Tablespoons chopped nuts (I used pecans but walnuts are good also)
1 1/2 teaspoon ground cinnamon
6 Tablespoons cold butter or margarine

In a large bowl, combine the flour, brown sugar, baking powder and salt. In another bowl, combine the milk, butter, syrup, sour cream, egg, and vanilla. Stir into the dry ingredients just until moistened.

Fill greased or paper-lined muffin cups two-thirds full. For topping, combine the flour, sugar, nuts and cinnamon. Cut in the butter until crumbly (I usually use my hands for this much easier!). Sprinkle over batter. Bake at 400 degrees for 16-20 minutes or until muffins are done. Cool for 5 minutes before removing from pans to wire racks. Make 20-24 muffins.
