Egg Scramble Surpreme

I always get a little depressed this time of year when I go into Walmart/Target etc. to find SCHOOL SUPPLIES lining the aisles.  ARE YOU KIDDING ME!  I really don't need the reminder that summer is half over already.  I really wish they'd wait until 2 weeks before school starts to do that to me!  De.press.ing!

Anyway, I love eggs!  They are so easy to make, pretty inexpensive, and so versatile!  I wanted a delicious & healthy (chocked full of veggies) breakfast so I threw this together & it was a winner.  It is packed with protein so it is the perfect way to start your day...especially if you're a little depressed.:)

Egg Scramble Supreme
1 teaspoon olive oil
1/4 cup diced green peppers
1/4 cup asparagus tips
1 large roma tomato, diced
1/4 cup turkey sausage crumbles, already cooked (found by breakfast sausages)
1/4 cup diced fully cooked lean ham
6 eggs, beaten
1/2 cup cottage cheese

Heat oil in a large skillet over medium heat.  Add peppers, asparagus and ham and cook until vegetables are tender, about 5 minutes.  Add the tomatoes and sausage and cook until hot.  Pour in the beaten eggs and cottage cheese.  Continue to cook while stirring until eggs are done.  

Can be served with salsa if desired.

Happy 4th!

I love the 4th.  For more than one reason.  The love of my life will turn the big 37 tomorrow.:) I love cute 4th of July crafts, decorations, and goodies!  I put together some cute goodies last year on here that you can check out to add to your cute 4th festivities.
