Heavenly Chocolate Mousse

Another of Kyla's creations!!  This is so super delicious.  I think it would be heavenly in a pie as well, but is really good just like this!

Heavenly Chocolate Mousse
Recipe from Taste of Home
8 squares (1 oz. each) semisweet baking chocolate, coarsely chopped
1/2 cup water, divided
2 tablespoons butter (no substitutes)
3 egg yolks
2 tablespoons sugar
1 1/4 cups whipping cream, whipped

In the microwave, heat chocolate, 1/4 cup water and butter until the chocolate and butter are melted.  Cool for 10 minutes.  In a small saucepan, whisk egg yolks, sugar and the rest of the water.  Cook and stir over low heat for 1-2 minutes or until a candy thermometer reaches 160 degrees.  Remove from the heat and whisk in the chocolate mixture.  Set saucepan in ice and stir until cooled, about 5-10 minutes.  Fold in the whipped cream.  Refrigerate for 4 hours or overnight.

Carrot Pudding with Lemon Sauce

This is an awesome throw-back recipe that my Mom made growing up that she got from my Grandma Wilson.  I remember liking this when I was younger, but I hadn't had it in so many years!  I've never had it anywhere else, and so when talking with my Mom while on vacation and mentioning it, she decided to whip some up at my request...I gotta say...much better than I remembered it!!  I know it might sound a little different, but it is SUPERB!!  Please give it some love!:)

Carrot Pudding with Lemon Sauce
Recipe from my Grandma Wilson
2 cup grated carrots (raw)
1 cup sugar
1/2 c. melted butter
1 cup flour
1/2 tsp. cloves
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. soda
1 cup raisins (optional...I am NOT a raisin fan, but absolutely LOVE them in this!!)
1 cup nuts (walnuts or pecans)

Combine the carrots and butter. In a separate bowl, sift the dry ingredients and then add the raisins and nuts to the mixture. Stir dry ingredients into carrot mixture. Bake in well-greased casserole dish (or an 8 x 8 inch cake pan...if you double the recipe it fits perfect into a 9 x 13 cake pan) at 300 for 50 minutes. Serve warm with lemon sauce drizzled over the top!!

Lemon Sauce
1 cup sugar
2 Tablespoons cornstarch
2 cups boiling water
2 Tablespoons butter
1 lemon, you will need the juice and rind (or 1/2 cup of real lemon juice)

Place all ingredients into a microwave safe bowl.  Cook in microwave on full power for 2 minutes, stirring after 1 minute.  Stir again and return to the microwave for another 30 seconds.  Sauce should be thick.

My goodness....I'm salivating!!:)

Sorry for the laspe in posts...we have a gazillion (that may be a bit of an exageration) recipes to share but we were just too unorganized to get them ready to go before we left for vacation.  And our 2 week vacation turned into 3 weeks......thus the lack of posts!

Lime Cheesecake with Blackberry Sauce

Here's a recipe as promised.  Tony's birthday cake...CHEESECAKE!  This is the perfect summertime cheesecake.  The lime was so refreshing, I absolutely loved it.  And the sweet blackberry sauce on top was just the perfect compliment!  This is a winner!!

Lime Cheesecake with Blackberry Sauce
Recipe from The Farm Girl
Crust:
2 cups graham cracker crumbs, crushed finely
6 Tablespoons sugar
6 Tablespoons unsalted butter, melted

Cheesecake:
3 (8 oz.) packages cream cheese
1 cup sugar
3 eggs
Juice of 2 limes
Zest of 2 limes

Blackberry sauce:
6 oz. blackberries, rinsed and drained (frozen works great!)
2 Tablespoons sugar
1½ teaspoons cornstarch
1½ teaspoons cold water

To make the cheesecake, preheat the oven to 325 ˚F. Combine the graham cracker crumbs, sugar and butter in a medium bowl. Stir together until well combined and moistened. Press the crumbs into the bottom of a 9-inch spring form pan.  In the bowl of an electric mixer, beat the cream cheese on medium-high speed until smooth. Gradually mix in the sugar. Blend in the eggs one at a time, beating well after each addition. Beat in the lime juice and lime zest until well combined. Pour the filling over the graham cracker crust.
Bake for 55-65 minutes or until the center is set. Turn the oven off and prop the door open about 4 inches. Let the cheesecake stand 30 minutes. Remove from the oven and transfer to a wire rack. Let cool 10 minutes. Carefully remove the sides of the pan and let cool to room temperature on the rack. Cover and refrigerate for at least 8 hours before slicing and serving.

To make the blackberry sauce, combine the blackberries and sugar in a medium saucepan set over medium-high heat. Cook, stirring occasionally, until the berries begin to release some of their juices and the mixture is simmering. Combine the cornstarch and water in a small bowl; whisk until smooth. Add the cornstarch mixture to the blackberries and mix well. Reduce the heat to medium and let cook, stirring occasionally, until the mixture comes to a low boil and thickens slightly. Remove from the heat, the sauce will thicken slightly as it cools.

Drizzle the sauce over the cheesecake before serving!  Enjoy!

I just had to throw in this picture!  Here's our family celebrating at Tony's parents house...he's the big 35!  (Incidentally those candles worked perfectly to cover up the crack in the middle of the cheesecake!:))

Cinnamon Rolls with Maple Glaze

I've been a fan of this roll recipe for a couple of years now.  It is super easy and the the rolls turn out really soft and scrumptious!  I'd always just put a regular frosting/glaze on them, but decided I'd try this little variation the last time I made these.  I don't think I'll ever make them any other way now!!  The maple in the glaze goes so well with the cinnamon rolls...Tony (the hubby) told me they are the best cinnamon rolls I've ever made!  You'll love these!

Cinnamon Rolls with Maple Glaze
Recipe from Pioneer Woman
1 quart Whole Milk
1 cup Vegetable Oil
1 cup Sugar
2 Tablespoons Yeast
8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour
1 teaspoon (heaping) Baking Powder
1 teaspoon (scant) Baking Soda
1 Tablespoon (heaping) Salt
Plenty Of Melted Butter
2 cups Sugar
Generous Sprinkling Of Cinnamon
MAPLE FROSTING:
1 bag Powdered Sugar
2 teaspoons Maple Flavoring (mapleline)
1/2-3/4 cup Milk
1/4 cup Melted Butter
1/8 teaspoon Salt

Mix the milk, vegetable oil and sugar in a pan. Scald the mixture (heat until just before the boiling point). Turn off heat and leave to cool 45 minutes to 1 hour. When the mixture is lukewarm to warm, but NOT hot, sprinkle with the yeast. Let this sit for a minute. Then add 8 cups of all-purpose flour. Stir mixture together. Cover and let rise for at least an hour.

After rising for at least an hour, add 1 more cup of flour, the baking powder, baking soda and salt. Stir mixture together. Sprinkle rolling surface generously with flour. Take half the dough and form a rough rectangle. Then roll the dough thin, maintaining a general rectangular shape. Drizzle 1/2 to 1 cup melted butter over the dough. Now sprinkle 1 cup of sugar over the butter followed by a generous sprinkling of cinnamon.

Now, starting at the opposite end, begin rolling the dough in a neat line toward you. Keep the roll relatively tight as you go. Next, pinch the seam of the roll to seal it.

Spread 1 tablespoon of melted butter in a seven inch round foil cake or pie pan (or you can just spray them with cooking spray).  Then begin cutting the rolls approximately ¾ to 1 inch thick and laying them in the buttered pans.

Repeat this process with the other half of the dough. Let the rolls rise for 20 to 30 minutes, then bake at 375 degrees until light golden brown, about 15 to 18 minutes.

For the glaze, mix together all ingredients listed and stir well until smooth. Just add enough milk to make it thick but pourable. Generously drizzle over the warm rolls. 

Enjoy a warm roll...they are super delicious!

4th of July Ideas!

We LOVE the 4th of July...such a great time to cook & eat & celebrate!!  It's also Tony (the hubby's) BIRTHDAY!!  So we get to celebrate with a birthday party as well!!:)  Cute side-note...when Tony was little he thought everyone was celebrating his birthday...from the parade to the fireworks!!  He's also a bicentennial baby...July 4, 1976...don't know if he'll appreciate me sharing that with you, but it is just so COOL!!:) 

Anyway, we've found some awesome ideas online that we would like to share with you...
